Here is one of my favourite recipe's:
Ingredients:
- 1 lb (500g) Fettucini or Linguini
- 2 chicken breasts, cut in strips
- 6 ounces (150 grams) bacon, chopped into smaller bits
- 2 cloves garlic chopped & crushed
- 1 large yellow onion, chopped
- 2 cups heavy cream
- 4 egg yolks
- 1/2 - 3/4 cup grated parmesan cheese (fresher the better)
- Salt and Pepper to taste
Preparation:
Saute bacon bits until golden.
Add garlic, and saute for about a minute.
Add sliced chicken breast and onion. Fry until meat is cooked and onion is translucent.
Add cream, and bring to a boil.
Turn heat to medium-low, and simmer for 15 minutes.
Meanwhile:
Beat egg yolks in a small bowl.
Temper the egg yolks with some of the sauce, the heat of the cream sauce will cook the egg, so don't worry too much about that.
And then, when the 15 minutes is up:
Stir in Parmesan cheese.
Stir in the egg sauce.
Allow cheese to melt for about a minute.
Remove from heat.
Pour sauce over your choice of pasta and serve.
